    Saute onions, green pepper and garlic in vegetable oil in a large skillet

    Cut tomatoes into chunks and add to onions, pepper and garlic. Cook over hot fire 12-15 minutes, stirring frequently

    Stir in flour, salt and pepper until blended

  • 4

    Pour mix- ture into pie shell

  • 5

    Spread grated cheese evenly over tomatoes

  • 6

    Sprinkle with parsley flakes

  • 7

    Bake in hot (400F.) oven about 15 minutes or until top is nicely browned

    Makes 6 to 8 servings.

  • 9-inch prebaked pie shell
  • 1 cup onions, chopped
  • 1 cup green pepper, chopped
  • 1 clove garlic, minced
  • 3 tablespoons vegetable oil
  • 5 to 6 medium green tomatoes
  • 2 tablespoons flour
  • 2 tablespoons salt
  • 1/8 teaspoon pepper
  • 1 cup Cheddar cheese, shredded
  • parsley flakes
