    In a large heavy skillet, saute squash, onions, and gar- lic over low heat in butter or oil until squash is lightly browned. Add remaining ingredients and simmer, covered, for 30 minutes

  • 3 medium-sized squash, diced
  • 2 onions, chopped
  • 1 clove garlic, minced
  • 4 tablespoons butter or vegetable oil
  • 1 cup tomato puree
  • 1 small can tomato paste
  • 1 sweet red pepper
  • 1 small can green chilies, sliced
  • 2 teaspoons ground red chili
