Melt butter in a 14-inch frying pan and set aside

Peel sweet potatoes and shred using a food processor or coarse side of a hand grater

Mix with butter in pan and sprinkle in sugar

Cook over medium heat about 15 minutes until potatoes begin to caramelize and begin to appear slightly translucent

Turn occasionally with a spatula. Add tequila and lime juice

Cook for 3 more minutes, stirring occasionally

Season with salt and pepper. Serve in a bowl garnished with lime

- 2 tablespoons tequila
- 1 tablespoon lime juice
