Cut each potato in half lengthwise

Score the faces about 1/4 inch deep using the point of a knife

Press on a diy paper towel until all possible moisture is removed

Spread with butter, margarine or bacon fat

Sprinkle lightly with paprika. Rub with the thumb until the oily coating turns orange from paprika and the cross-scoring comes into view

Bake,scored side up, in hot oven until done

The tops will puff, crust over, and assume a beautiful golden brown.
